摘要:

可持续消费正在成为各国制定消费战略和公共政策的一个聚焦点,也是未来中国经济发展中的必然选择。本文首先从两个维度构建了一个食品可持续消费行为的研究框架,在此基础上,重点讨论了不同学科对食品可持续消费行为动力机制的解释及其对应的引导策略,说明了消费者对可持续食品标签偏好的研究进展,并介绍了选择实验方法在食品需求分析中的应用。从研究趋势上看,在探讨可持续消费行为的多重动机、理解消费者的决策机制和制定引导策略时,不同学科的融合将越来越受到重视。而且,在复杂信息系统中研究多重动机的冲突或关联、多元食品标签的价值互补或替代、多种引导策略的协同效果将成为未来研究的重要方向,而选择实验方法在解决这些问题时具有广阔的应用空间。

Abstract:

In the contemporary world,sustainable consumption is becoming a major target of consumption strategy and public policy,and it is also an inevitable selection of China in the future development.In present paper,we firstly construct a framework to analyze consumers' sustainable food consumption behaviors.On this basis,we emphatically discuss incentives and corresponding intervention strategies of sustainable food consumption in different disciplines.Present researches on consumers' preference for sustainable food labels are sketched and we also introduce choice experiment applications on food demand analysis.Seen from the tendency of present researches,multidisciplinary integration is receiving increasing emphasis on discussing incentives of sustainable consumption,understanding consumers' decision-making mechanism,and making intervention strategies.Moreover,an important direction of future research is to put and arise questions on the background of complex scenarios,i.e.conflicts or correlations among multiple incentives,complementation or substitution among food labels,synergistic effects among multiple interventions,etc.And choice experiment has a wide application space to analyze this kind of questions.

(5)不同膳食结构的碳足迹具有明显差异,其中,消费肉制品和乳制品的碳排放量显著高于谷物、蔬菜和水果,例如,消费1kg的牛肉CO2排放量为27kg,同质量的奶酪为13.5kg,猪肉为12.1kg,而土豆和大米仅为2.9kg和2.7kg(Hamerschlag,Venkat,2011)。

(6)事实上,第一类可持续食品标签也面临着消费量变化的可能性,例如,消费者由购买普通食品转而购买有机食品以后,可能会因为固定的食品预算而减少购买量。但绝大多数现有研究并没有考虑这一问题。这主要是因为,随着经济发展和收入提高,食品支出在消费者的总支出中所占的比例不断降低,且食品的需求价格弹性较低,所以可持续食品的溢价不足以明显降低消费量。

(7)该策略的一个经典应用就是在香烟外包装上添加“吸烟有害健康”的相关警示图片。
